
Enjoy a hearty homemade burrito filled with seasoned beef, black beans, and rice, baked to crispy perfection.
Tortilite Original Flour Tortillas 10” 6 Pcs
Olive oil 1 Tbsp
Finely Diced Yellow Onion 1½ Cups
Ground Beef 1 Pound
Taco Seasoning 1 Oz
Mild Red Enchilada Sauce ¾ Cup
Black Beans 15 Oz
Uncooked Rice 1 Cup
Freshly Grated Cheddar cheese 2 Cups
Sour Cream 3 Tbsp
1. Preheat the oven to 220°C / 200°C fan-forced.
2. In a large frying pan, heat oil over medium-high heat. Add the brown onion, capsicum, and garlic. Sauté, stirring, for 2 minutes or until slightly softened. Add the beef mince and cook, breaking it up with a wooden spoon, for 5 minutes or until browned and cooked through.
3. Add the beans, corn, and taco seasoning. Stir for 1 minute or until fragrant. Add the sauce and spring onion, then continue to cook, stirring, for 2 minutes or until heated through. Season with salt and pepper.
4. Meanwhile, prepare the rice according to package instructions.
5. Warm the tortillas according to package instructions. Place tortillas on a flat surface. Divide beef mixture along the centre of each tortilla. Top evenly with rice and Mexican cheese. Roll up tightly to enclose the filling. Wrap burritos in foil. Bake for 5 minutes or until cheese melts. Serve the burritos with sour cream and lime wedges.
